So what’s going on with supermarket tomatoes? It turns out that people who grow tomatoes for supermarkets typically get paid by the pound, not for the quality of their produce. As explained by James Briscione from the Institute of Culinary Education, they want tomatoes to be practically indestructible, over everything else.
