Dr Oz: Crockpot Meals

Picture this; it’s Sunday and you’ll be working late for the upcoming week. Dr Oz has the solutions. Reach under that cabinet and dust off your Crockpot to prepare quick and easy meals for the week. On today’s show, Dr Oz was joined by Tanya Steel from Epicurious.com to show you how to make delicious, inexpensive meals in less than 5 minutes.  This is definitely one to save to your Pinterest board!!!

Dr Oz: Slow Cooking Carnitas Tacos Recipe

2 lbs boneless country-style pork ribs or pork shoulder (cut into 1 1/2-inch pieces)
2 tsp of salt

Dr Oz Crockpot Tacos Recipe

Dr Oz Crockpot Tacos Recipe

2 tsp of black pepper
2 tsp of dried oregano (Look for Mexican oregano)
1/2 onion (cut into 4 pieces)
1 avocado, halved, pitted, sliced
Fresh cilantro sprigs
Sliced red bell peppers (optional item) You can also use carrots or any veggie you prefer.
Corn tortillas
Roasted tomatillo salsa

Instructions:
-Place the meat inside the Crockpot
-Place onions inside Crockpot
-Throw in the carrots, avocado, or any veggie you prefer
-Sprinkle in seasonings (oregano, cilantro, salt and pepper)
-Put the lid on the Crockpot and you’re done! (Be sure to keep the lid on the entire time)

Allow it to cook for at least 6 hours. (The more, the better. Not even the worst cook can burn a Crockpot meal—please don’t make me eat those words!) When done, allow it to cool down and then you shred it.

Warm up a soft shell taco in the microwave and put the meat onto the taco along with the tomatillo salsa. You’re ready to eat!

Dr Oz: Turkey and White Bean Chili Recipe

1 Tbsp of vegetable oil
2 medium chopped onions
1 1/2 tsp of dried oregano
1 1/2 tsp of ground cumin
1 1/2 lbs of lean ground turkey
1/4 cup of chili powder
2 bay leaves
1 Tbsp of unsweetened cocoa powder
1 ½ of tsp salt
1/4 tsp of ground cinnamon
1 (28 oz) can of whole tomatoes
3 cups of beef stock of canned beef broth
1 (18 oz) can of tomato sauce
3 (15 oz) cans small white beans (drained and rinsed
1 chopped red onion
Chopped fresh cilantro, (add to taste)
Plain low-fat yogurt

Directions:

-Heat oil in a pot (medium heat)
-Add onions (sauté for til golden brown)
-Add in oregano
-Add cumin
-Stir for 1 minute
-Increase to medium heat
-Add turkey and stir until cooked
-Place the onions and turkey into the slow cooker
-Add in the chili powder
-Add bay leaves
-Add cocoa powder
-Add salt and cinnamon
-Add tomatoes (with their juices)
-Break up tomatoes with back of spoon
-Mix in stock
-Mix in tomato sauce
-Turn the slow cooker onto low
-Cook for 5 hours
-Add the beans to the chili and cook on low for 1 hour more
-Discard bay leaves
