Dr Oz: Paula Dean’s Diet Recipe

Dr Oz issued a challenge to Paula to cook some of her favorite recipes with half the fat and half the calories.  Read below to find out two of Paula’s favorite dishes made healthier and if they stood up to the taste challenge.

Dr Oz: Paula Deen Oven Fried Chicken Recipe

– Boneless skinned chicken Dr Oz Fried Chicken Recipe
– Salt and pepper
– ½ cup buttermilk
– 1 ½ tbsp Dijon mustard
– 2 cloves garlic
– 1 1/2 tsp hot sauce
– 1 cup self-rising flour
– Cooking spray

    You gave the calorie count for the orginal “fat” way but not for the new diet version. What would the count be for the macaroni and cheese.

    What temperature should the chicken be baked at? I never bake chicken, and would like to know the proper temperature so as not to dry out the chicken. Thanks!!

    I get great results baking chicken @350 for 30 minutes. The above recipe also didn’t include the info to coat the chicken with for before baking.

    This is the first recipe I have looked up from the Dr. Oz. show. I find them lacking important details. in the Mac & Cheese receipe I I had not watched the show I would have mixed the milk,egg, etc. ingredients in with the uncooked macaroni instead of mixing in a bowl separately and then stirring together. They did not mention but I would have slightly greased my baking dish. No wonder it was clumpy.

    The directions for both the chicken and the mac n’ cheese are totally off. A man must have written this and one who never sets a foot in a kitchen. There was no way of knowing what went together first and how long to cook it, or at what temperture.

    However, the show itself was really good!

    Paula Deen’s Oven-Fried Chicken
    ■Salt & Pepper
    ■3/4 cup low-fat buttermilk
    ■1-1/2 tablespoons Dijon mustard
    ■2 cloves garlic, minced
    ■1-1/2 teaspoon hot sauce
    ■1 cup self-rising flour
    ■Boneless skinned chicken
    Mix the first five ingredients together and marinate the chicken breasts for 2-8 hours. Mix the flour, more salt and pepper in a bag, then toss in the chicken breasts and shake. Lay them out on a baking sheet (looks like the kind with slots so the grease can drain). Bake for 30-50 minutes depending on the size of the chicken pieces.

    The cooking time of the chicken depends of size of portion. You can also use thigh or legs with less time cooking.The recipe did not specify chicken breast. These could also be split lengthwise for better cookingn control. Thanks Sam for better instructions.

    The ingredients and Sam’s procedure are correct. What’s missing is cooking temperature. My wife attempted this recipe, and it was a disaster. First off, I thought she was making an Italian dish, the house smelled like garlic bread. Second, the Chicken failed to brown. Since she lacked the temperature setting, she started at 375, then at the 40 minute mark she jumped it to 450. Between the smell and the lack of browning, it was “Don’t cook tonight, Call Chicken Delight!”, fast food…and it tasted great!
