On today’s show, Doctor Oz was joined by Celebrity Chef, Todd Wilbur, to show you how to make your favorite cheesiest, greasiest, gooiest restaurant appetizer without gaining a pound. Dr Oz: Todd Wilbur Hot Artichoke Spinach Dip Recipe

What more can you want than a Reduced-Fat and Reduced-Calorie Artichoke Spinach Dip?


1 C chopped frozen artichoke hearts (thawed and diced)
½ C frozen chopped spinach (thawed)
2 Tbsp water
4 oz cream cheese (reduced-fat)
4 oz 2% Greek yogurt(brings down the fat and calories)
½ C grated Parmesan cheese
2 Tbsp milk (low-fat)
½ tsp salt
¼ tsp crushed red pepper flakes (gives it a spicy kick)
¼ tsp garlic powder
1 pinch ground black pepper
½ diced tomato


In a microwave–safe bowl, combine diced artichoke hearts and chopped spinach
Add 2 tablespoons of water
Cover bowl with plastic (poke holes to vent)
Microwave vegetables on high (6 minutes)
Combine remaining ingredients in a saucepan
Add the steamed artichokes and spinach
Place pan over medium/low heat for 10 minutes (stir often)
Arrange the diced tomato in a pile in the center of the dip. Serve with crackers , toasted bread or anything for dipping. (Todd says the key is to make good choices into what you dip as well!)

Olive Garden’s spinach dip contains 488 calories and 23 g of fat. Todd’s healthier dip contains only 230 calories and 14 g of fat for ½ C serving.

Dr Oz: Todd Wilbur Potato Skins Recipe

Todd Wilbur made for Dr Oz a delicious yet Reduced-Fat and Reduced-Calorie Potato Skin Recipe.


4 medium russet potatoes
1 C reduced fat cheddar cheese
8 tsp turkey bacon pieces (helps cut the calories and fat)
1 Tbsp fresh chives
1/3 C sour cream (reduced-fat)-helps cut the calories and fat
Canola oil non-stick cooking spray
Salt (to taste)


Preheat oven to 400°F
Bake the potatoes for 1 hour (or until tender.)
Make two lengthwise cuts through each potato (3 ½ -3/4 -inch slices)
Discard the middle slices (you can save them for a separate dish of mashed potatoes)
Scoop some of the potato out of each skin with a spoon. (Leave ¼- inch of potato inside the skin)
Raise oven temperature up to 450°F and spray the entire surface of each potato skin with a light coating of canola oil spray
Place the skins on a baking sheet (open side up)
Salt each one
Bake for 12-15 minutes (or until the edges begin to brown.)
Spread 2 tablespoons of cheese on each potato skin
Sprinkle 1 tsp of bacon pieces on top of the cheese on each potato skin
Bake the skins for another 2-4 minutes (or until cheese is melted)
Remove the skins from the oven and transfer to a plate
Combine the chives with the sour cream
Serve in a small sauce cup in the center of the plate (skins should be arranged around the sour cream, like spokes on a wheel).

TGI Fridays potato skins have 624 calories and 41 g of fat. Todd’s potato skins only have 178 calories and 9 g of fat. (That’s a big difference!)
