Dr Oz: Meal Makeover Ambush

Doctor Oz continued his Meal Makeover Ambush by heading to Philly with Chef Jose Garces to make a Steak Taco Recipe with a black bean stew, and then on to making a Shrimp Scampi Recipe with Chef Mike Isabella. Dr Oz went incognito has they visited a food truck on the streets. As Philly residents approached the cart to order their lunch, Dr Oz was there to ask them if they really needed the extra cheese on their fattening cheese steak. (That’s one way to kill a lunch!)

Dr Oz: Steak Tacos & Shrimp Scampi Recipe

Dr Oz learned how to make healthy Steak Taco & Shrimp Scampi Recipes.

Chef Jose said he could makeover his famous steak taco using healthy ingredients. Some of his key ingredients were cooked black beans and salsa.

Jose Garces Steak Taco Recipe

Ingredients

Tacos
4 oz marinated skirt steak
2 corn tortillas
1 oz salsa roja
2-3 slices spicy avocado
1 oz stewed black beans
1 Tbsp grated Cotija cheese

Marinade
4 oz skirt steak (slice 1/2-inch across the grain)
½ C extra virgin olive oil
¼ C Italian parsley leaves
1 chopped garlic clove (an anti-oxidant)
1 tsp kosher salt

Dr Oz: Black Bean Stew Recipe

1 finely chopped onion
1 roasted red pepper (peel, de-seed and chop)
1 roasted green pepper (peel, de-seed and chop)
2 chipotles en adobo
2 cloves roasted garlic
2 Tbsp apple cider vinegar
1 Tbsp dried oregano
1 Tbsp sugar
1 qt rinsed black beans
3 qt water
4 sprigs epazote
2 Tbsp salt (to taste)

For the Salsa
6 beefsteak tomatoes (charred on grill)
1 clove garlic (charred on grill)
½ onion (charred on grill)
2 tomatillos (charred on the grill)
1 toasted chile de arbol
1 chipotle en adobo
1 jalapeño (charred on the grill)
½ C chopped cilantro,
2 Tbsp kosher salt (optional)

Directions
Puree all ingredients (except skirt steak) in a blender for the marinade
Place skirt steak in a bowl and pour marinade on top
Cover and allow to marinate for 30-40 minutes in the fridge

For the black beans: Sweat onions and garlic in blended oil until very soft
Add remaining ingredients and bring to a boil. Then purée in blender.
Rinse black beans and put them in a pot filled with water
Add salt and epazote
Boil until beans are almost (not completely) cooked and remove from heat.
Heat a separate large pot over high heat
Add in purée. Cook for a few minutes
Add beans and cook until thoroughly cooked
Season with salt (optional)

For salsa: Use a hand blender to pureee all ingredients
Place in fridge

To assemble the dish: Preheat a cast iron pan or griddle over high heat
Drain excess marinade from the steak
Season steak with salt and pepper
Place in the hot pan and cook to medium rare
Remove from the heat and set aside
Wipe pan and place tortillas on to heat
Place a spoonful of black beans in the center of each tortilla
Top with the steak
Place a dollop of the salsa roja and add a slice of avocado
Sprinkle with Cotija cheese

Traditional: 717 calories for 2 tacos. Chef Jose’s: 546 calories

Mike Isabella Shrimp Scampi Recipe

Mike and Dr Oz headed to DC to one family’s house to ambush their spaghetti and meatball dinner. (Did you check out those tennis-sized meatballs?) The family’s dish had a serving of 4 on a plate for 1. Dr Oz whisked the family back to the studio to have Chef Mike show them how to prepare a healthier alternative.

Mike’s tips included using olive oil instead of butter. Mike also didn’t use flour, which cuts the calories.

Dr Oz: Shrimp Scampi Recipe

Ingredients

2 lbs peeled and de-veined large shrimp
3 oz extra virgin olive oil
1 lb whole-wheat linguini
1 ½ C dry white wine (alcohol will be cooked out of it)
1/3 C fresh lemon juice
1 C halved cherry tomatoes (sweeter than regular tomatoes)
½ C chicken broth (low sodium, preferred)
1 ½ Tbsp garlic, minced
1 Tbsp basil (fresh and finely chopped)
1Tbsp parsley (fresh and finely chopped)
1 tsp kosher salt
½ tsp black pepper

Directions

Bring a large pot of salted water to a boil
While that’s heating, heat extra virgin olive oil in a large sauté pan
Sauté shrimp 2-3 minutes on each side
Move shrimp to another plate and finish cooking remaining shrimp.
Drain excess oil from the pan
Add linguini to the boiling pot of salted water. Cook per instructions.
Drain, rinse under cold water and set aside
To prevent sticking, drizzle on some extra virgin olive oil
Add white wine, lemon juice, chicken broth and garlic to the sauté pan for shrimp
Cook over medium/high heat for about 5 minutes (or until liquid has reduced by half)
Mix in the tomatoes
Add salt and pepper (to taste)
Reduce heat to medium and add shrimp and linguini
Reheat
Mix to evenly coat with sauce and heat through for about 1-2 minutes
Sprinkle with parsley and basil and serve

Traditional: 840 calories. Chef Mike’s: 464 calories
