Dr Oz: Vegan Cupcake Recipe
Doctor Oz said that just one cupcake can have over 750 calories in it, so he challenged Elmo and Chef Art Smith to make a Healthy Cupcake Recipe. Art Smith has been going around the country with Elmo to do a show called Food For Thought, which teaches families how to make healthy meals on a budget. Art Smith and Elmo came up with a Vegan Cupcake Recipe that they called Hummingbird Cupcakes – why the name Hummingbird? I have no idea! Elmo Hummingbird Cupcake Recipe
Art Smith said that the biggest reason that people do not like to bake is because it makes a big mess, but with this Vegan Hummingbird Cupcake Recipe, you only need two bowl – one wet bowl and one dry bowl. You mash up all of the wet ingredients in the wet bowl, and you sift together the dry ingredients in the dry bowl. Then you carefully incorporate the dry ingredients into the wet ingredients. Art Smith Vegan Hummingbird Cupcakes
Elmo asked Art Smith what the word “Vegan” means, and that means that there are no animal products in the recipe. So this recipe does not use any milk, eggs, butter, etc. After the Vegan Hummingbird Cupcakes have baked, Art Smith even showed Dr Oz how to make a Vegan Cream Cheese Icing out of tofu cream cheese, pineapple, powdered sugar and topped with crushed walnuts. Art Smith said that Elmo is a pickier eater than Oprah, and even Elmo loves these Healthy Cupcakes, which only have 250 calories (instead of 750 calories) and 9 grams of fat.
