Dr Oz: Rachael Ray Beef Stew Recipe & Holiday Recipe Fixes

Rachael Ray Cider Beef Stew Recipe

Dr Oz brought Rachael Ray on his show to discuss solutions for Holiday Cooking Disasters.  Don’t know what dish to prepare for the holidays? In this segment, Rachel Ray showed you her full proof dish that anyone can make—Autumn Beef Stew With Apple, Onion and Roasted Garlic. Rachael stated this was her mom’s recipe that she loved. Since stews were slow cooked meals, you can’t screw it up. (She’s never met me!) The longer the cooking, the better the stew gets.

Dr Oz: Rachael Ray Autumn Beef Stew with Apple, Onion & Garlic

Ingredients: Dr Oz Rachael Ray Beef Stew Recipe

2 bulbs of garlic (helps lower blood pressure)
EVOO – Extra Virgin Olive Oil, for drizzling
Salt and pepper
1/4 to 1/3 pound bacon (not too smoky in flavor), cut into lardons (fat matchsticks)
1 stick butter, divided
2 1/2 to 3 pounds beef chuck, cut into 2-inch cubes
Flour, for dredging plus 2 tablespoons
3 carrots, sliced in 2-inch chunks on an angle
2 apples, such as Honeycrisp, peeled and chopped
2 to 3 ribs celery, chopped
1 large onion, chopped
2 fresh bay leaves
2 to 2 1/2 cups cloudy organic apple cider
2 cans beef consommé
Herb bouquet, a few sprigs each of thyme, parsley and sage tied together with kitchen string
2 1/2 pounds (about 5 potatoes) russet potatoes, peeled and cubed
2 to 3 large parsnips, peeled and cubed
1 1/2 cups sharp white cheddar, shredded
1 cup whole milk
Freshly grated nutmeg
1/4 cup chives, finely chopped

Mix the ingredients and place in the oven at 325 degrees for 2 ½ hours. If you missed the mark by ½ hour, that’s okay. Over 2 hours, your stew is going to look like dog food. (See, I told you I could mess it up!) Dr Oz tried a piece of the finished meat that had slow cooked for 2 ½ hours. He stated it was delicious.

Dr Oz: Rachael Ray Mashed Potatoes Recipe

Mashed Potatoes: (side dish)
Cook the parsnips (contains potassium)
Add in milk
Add super sharp cheddar cheese
Add chives and freshly grated nutmeg.
Serve the stew in shallow bowls with parsnip mash on the side

While cooking, Rachael Ray mentioned her new cooking challenge show that pits chef against chef for a chance to win $50,000 for their charity of choice. (Didn’t you love it as Rachael asked Doctor Oz to do one simple thing—dish out a portion of the potatoes and he had practically spooned out the entire pot on his plate. Now, that’s my kind of portion!)
