Dr Oz: Alex Guarnaschelli “Almost” Chicken Cacciatore
Chef and author of “Old-School Comfort Food” Alex Guarnaschelli joined Dr Oz to share one of her favorite go-to, one-pot meals. Her “Almost” Chicken Cacciatore is an easy meal made entirely in one pot to save you both time and dishes. She explained that she actually has never cooked with a lid because “water is the opposite of flavor” which means this recipe is guaranteed to be full of flavor! Although this chicken isn’t crusted like typical Cacciatori, it’s still one incredible dish.

- 6 chicken legs
- 1 tsp whole cumin seeds
- 1 large white onion – peeled, halved, sliced thin
- 6 garlic cloves – peeled, halved lenghwise
- 2 cinnamon sticks
- water – as needed
- 6 chicken thighs
- Kosher salt
- 2 tsp chili flakes
- 1 large ginger knob – peeled, grated
- 1 C whole, peeled tomatoes
- 4 fresh or dried bay leaves

- Heat the canola oil in a large skillet over high heat
- Arrange the chicken thighs and legs on a tray in a single layer and season them with salt
- Turn the pieces of their side and season again
- When the oil starts to smoke lightly, carefully add the chicken, but don’t overcrowd the pan
- Let the chicken brown for 3-5 minutes on the first side
- Use metal tongs to turn the chicken pieces to their second sides and let them cook for 3-5 minutes
- Transfer the chicken to a tray and set it aside
- In the same skillet, add the chili flakes and cumin seeds, stirring quickly to toast for about 15 seconds
- Add ginger, onions, garlic stir combine
- Season the ingredients with salt to taste, then add the tomatoes, cinnamon, and bay leaves
- Let the mixture cook for about 10 minutes
- Add the chicken back to the pan and keep the heat low and keep cooking until the chicken is cooked through, 30-45 minutes
- When the chicken is cooked through, then remove and throw away the bay leaves and cinnamon sticks
- Taste to adjust seasoning as needed and transfer to a serving bowl
