- 1/4 C fresh-squeezed orange juice
- 1 tsp toasted sesame oil
- 1 tsp agave
- 2 tsp matcha powder
- 1 tsp kosher salt – divided
- 1 lb chicken tenders
- 2 tbsp soy sauce
- 1/2 tsp orange zest
- 1 tsp rice wine vinegar
- 1 1/2 C breadcrumbs
- 1/2 C flour
- 2 large eggs – beaten

- Preheat the oven to 400 degrees
- Line a baking sheet with parchment paper
- In a small bowl, whisk the soy sauce, orange zest, orange juice, agave, and rice vinegar to make the dipping sauce
- Set aside to let the flavors marinate while you prepare the chicken
- In a pie plate or shallow bowl, mix the bread crumbs and matcha powder together
- In a separate shallow bowl, mix 1/2 tsp salt and flour
- Put the beaten eggs in a third shallow bowl
- Work with one tender at a time and dredge the chicken in the seasoned flour, then the egg, then the bread crumbs
- Put the tenders on the prepared baking sheet
- Bake for 10 minutes until golden and cooked through
- Add a dash of salt
- Serve with the dipping sauce on the side
