Dr Oz: Egg-Free Protein-Packed Meals
Many argue that breakfast is the most important meal of the day, but how can you get a protein-packed breakfast if you can’t stand eggs? Mark Bittman had just the meal solutions for egg haters! Thankfully, he showed three separate dishes that make great breakfasts without using a single egg!
Mark first suggested you try making a breakfast burrito with beans and greens. He explained that black beans actually have more protein than eggs, so you certainly don’t have to worry about that if you go with this tasty meal. One woman showed how she cooks black beans, kale, and pumpkin seeds together before wrapping the mixture in a whole wheat tortilla with hot sauce. It’s a filling breakfast that you can easily customize to your liking, and you certainly don’t need eggs!
Dr Oz: Protein-Packed Breakfast Ideas

Padma Lakshmi taste-tested a couple dishes using vegetable noodles and gave her nod of approval to the most delicious one. Now, you can make it at home! (iamagenious / Flickr)
Then, Mark and Dr Oz tasted couscous made with almond butter, almond milk, dried cherries, and a little bit of dark chocolate. One busy mom uses sweetened almond milk to cook the couscous and then adds in the other ingredients to make for a sweet and luxurious way to start off your day, without feeling guilty!
Finally, they went back to a savory dish to taste-test a broccoli and tofu scramble. You may turn up your nose at the thought of tofu with broccoli, but some fresh peppers, smoked paprika and chili flakes really transform this sauteed healthy meal! Once again, you’ll be eating more protein than you would if you would’ve had eggs.
Dr Oz: Pickled Spiralized Vegetables
Speaking of healthier substitutes, Padma Lakshmi revealed some of her secrets to making veggie noodles taste like real pasta. Padma first showed viewers how to take advantage of the pickling process to completely transform vegetable noodles. She also loves that pickling is a fantastic way to get your kids involved. She spiralized carrots and then added them to a jar with hot peppers and sliced onions, before filling the jar with white distilled vinegar. A few weeks later you’re left with delicious pickled veggies!
Dr Oz: Veggie Noodles Taste Test
Next, Dr Oz asked Padma to taste-test a couple dishes that used spiralized vegetables or veggie noodles, instead of regular pasta. Would the substitute really be good enough for Padma’s approval? She first tried a chicken parmesan dish with chicken that was breaded in almond meal, served on top of rutabega noodles. Dr Oz was a fan of the rutabega noodles, as was Padma, who agreed that the rutabega made for a great flavor addition without turning mushy or soft.
They then moved on to try Drunken Veggie Noodles with Chicken and Shrimp made with spiralized zucchini, string beans, carrots, red pepper, and so much more. You can get the recipe for that incredible dish on the next page. Padma chose the drunken noodles as the clear winner between the two, but agreed they were both delicious!
Dr Oz: Spiraled Vegetable Drunken Noodles With Chicken & Shrimp Recipe Ingredients
- 1/2 large onion – sliced
- 1/2 lb chicken breast – sliced thin
- 6 Chinese dried chili peppers
- 1 C green beans
- 10 oz spiraled zucchini
- 1/2 C Thai basil (can use Italian basil)
- 1/2 lime – juiced
- 2 tbsp sriracha sauce
- 1 tbsp dark soy sauce
- 1/4 C oyster sauce
- 1 small piece ginger – minced
- 1 tbsp cornstarch
- salt – to taste
- 1 tbsp oil
- 2 garlic cloves – minced
- 1/2 lb large shrimp – peeled, deveined
- 1 egg
- 3/4 C red peppers – sliced
- 4 oz spiraled carrots
- 1 C bean sprouts
- 3 tbsp brown sugar – packed
- 1/2 C fish sauce
- 1 tbsp toasted sesame oil
- 3 garlic cloves – minced
- 3/4 C water – divided into 1/2 C and 1/4 C
- cooking spray
- pepper – to taste
Dr Oz: Spiraled Vegetable Drunken Noodles With Chicken & Shrimp Recipe Directions
- In a bowl, mix the brown sugar, fish sauce, sriracha sauce, sesame oil, dark soy, minced garlic, oyster sauce, and minced ginger
- Mix 1/2 C water and cornstarch together then mix with the sauce and set aside
- In a wok or frying pan over high heat, add 1 tbsp oil
- Add the chicken and saute until mostly cooked, then remove the chicken
- While the wok is still hot, add the shrimp and saute, then remove when pink and cooked
- Spray the wok with cooking spray, then scramble an egg and remove from the pan
- Add onion and garlic to the wok and saute for a couple minutes
- Drop the heat to medium then add the chilies, red pepper, and green beans to the pan
- Add 1/4 C water and cover until the green beans are bright green
- Add the shrimp, chicken, and egg back into the wok then pour half the sauce over it
- Drop the basil into the wok and mix
- Add the spiraled vegetables then the rest of the sauce with the bean sprouts
- Mix everything in a wok then season with salt and pepper and saute for a minute
- Pour lime juice over the drunken noodles then serve while hot
