Hungry Girl’s Favorite Carb Expander Recipes

Dr. Oz has been talking to Hungry Girl Lisa Lillien about her promise that you can Eat Twice as Much and Lose 5 Pounds. Her plan is easy to follow and if you incorporate her food expanders into your favorite recipes you will be on your way to losing weight, even during the holidays. She has some wonderful recipes with her favorite meat expander, but she has even more to share.

Hungry Girl’s EZ Cheesy Zucchini Lasagna Recipe

Here is what you need for 2 servings:

  • 4 Zucchini cut into ¼ inch thick slices (cut lengthwise from long zucchini)
  • 1/2 cup ricotta cheese, light or low-fat
  • 1 egg white
  • 1/4 cup shredded mozzarella cheese, part skim
  • 1 tablespoon reduced-fat Parmesan-style grated topping
  • 1 cup mushrooms, chopped
  • 1 cup canned crushed tomatoes
  • 2 sheets oven-ready lasagna noodles
  • 1 tablespoon fresh basil, chopped
  • 1/2 teaspoon fresh garlic, chopped
  • 1/2 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • Dash ground nutmeg
  • black pepper, optional

Here is what you need to do:

  1. Preheat oven to 425 degrees and grease a loaf pan with nonstick spray.
  2. In a medium bowl combine the ricotta cheese, egg whites, basil, garlic, salt, and nutmeg.
  3. Bring a large skillet sprayed with nonstick spray to medium-high heat. Cook zucchini strips about 3 minutes per side, or until softened.
  4. Remove the zucchini and gently pat to dry. Remove skillet from the heat, spray it again, and return to medium-high heat. Cook and stir mushrooms for about 4 minutes until softened. Combine the mushrooms with the ricotta mixture.
  5. In a separate medium bowl mix the tomatoes and Italian seasoning.
  6. Evenly layer ingredients in the loaf pan: 1/4 cup seasoned tomatoes, 1 lasagna sheet, half of the mushroom-ricotta mixture, 1/4 cup seasoned tomatoes, 2 zucchini slices. Repeat layering with remaining ingredients.
  7. Top with mozzarella cheese and grated parmesan topping. Bake for about 20-25 minutes or until cheese is slightly browned.

Hungry Girl’s Zucchini Skins Recipe

Here is what you need for 2 servings:

  • 2 medium-large zucchini, stem ends removed
  • 2 slices center-cut bacon or turkey bacon, cooked
  • 1/4 cup chopped tomato
  • 1/2 cup Mexican blend cheese, reduced fat
  • 11 tablespoons scallions, chopped
  • Optional toppings: salsa light sour cream

Here is what you need to do:

  1. Preheat oven to 375 degrees and grease a baking pan with nonstick spray.
  2. Pierce the zucchini several times with a fork and place on a microwave-safe plate, and cook for 2 minutes. Flip the zucchini and microwave for 2 additional minutes, or until softened. Pat the zucchini dry and allow to cool for about 5 minutes. Cut the zucchini in half lengthwise and gently scoop out and discard the inside flesh, leaving about 1/4 inch inside the skin. Completely pat dry.
  3. Place hollowed-out zucchini on the baking sheet, cut sides up. Spread the cheese among the zucchini.
  4. Crumble or chop the bacon and sprinkle over the cheese.
  5. Bake for about 5 minutes or until the cheese has melted.
  6. Cut each piece in half widthwise, and sprinkle with tomato and scallions.
