Dr Oz: Healthy Hotcakes Recipe
In this segment, Dr Oz brought out author and Top Chef, Sam Talbot, to show you how to prepare delicious, healthy, hotcakes that cut the calories and carbohydrates. Sam Talbot was diagnosed with Type 1 diabetes at 12-years-old. Even at that age, he prepared food with his grandmother to help keep his condition in check. Sam told Doctor Oz that he had two very important secrets to make hotcakes in a healthy way: using whole wheat flour, which is high in calcium and fiber, and using agave instead of sugar.
Dr Oz: Lemon Ricotta Hotcakes Recipe
Healthy Hotcakes Wet Ingredients:
– Grated zest and juice of 2 lemons
– 1 cup whole milk ricotta cheese
– 1 cup whole milk
– 3 tbsp almond milk
– 1 tbsp agave nectar
– 2 tbsp unsweetened applesauce
– 1 tbsp reduced-fat sour cream
– 3 organic cage-free organic eggs, separated
Sam had Dr Oz crack the eggs. He did well until he had to separate the yolk. Let’s just say this batch may be a little on the crunchy side! Dr Oz did the mixing and performed well, so that made up for the egg cracking.
Healthy Hotcakes Dry Ingredients:
– 1 cup whole wheat flour
– 1 tbsp granulated stevia extract
– 1 tsp baking powder
– 1 tsp baking soda
Dr Oz mixed the wet ingredients with the dry ingredients. Unfortunately, Dr Oz had no idea what it meant to “fold” in the egg whites. That’s okay, Sam helped him with it anyway and he did a good job with that too. They placed the batter into the pan and prepared for a Dr Oz Show first. Doctor Oz was going to flip the hotcake for the studio audience for the first time.
Bonus Tip: To flip like the pros, fully cook the pancake on one side. Scoot the pancake to the back of the pan and then flip it up and over. Dr Oz did it perfectly!
