Rocco DiSpirito’s Swiss Chard Turkey Salad with Golden Raisins and Capers is just the recipe you need to increase your energy, Not to mention his cocoa-dusted almonds! ([email protected] / Flickr)
- 2 tbsp water
- 2 tbsp chopped capers + 1 tsp caper brine
- freshly ground black pepper
- 1 C cherry tomatoes
- 1 tsp extra-virgin olive oil
- 1 chopped avocado (optional)
- 1/2 C chopped golden raisins
- 2 tbsp freshly squeezed lemon juice
- 1/2 C toasted almonds
- 1/3 C sliced red onion
- 6 C chopped Swiss chard – stems cut very thin
- 6 oz store-roasted skinless turkey breast – shredded

- Combine the raisins in a microwave-safe bowl with 2 tbsp water
- Cook on high until simmering
- Remove from the microwave and let stand for a couple minutes
- Put the lemon juice ,capers, and almonds in a small bowl and season with black pepper
- Add the raisins, their soaking liquid, the tomatoes, and the onion then mix well
- In a large bowl, combine the Swiss chard, turkey, and olive oil then toss well
- Add the mixture from the small bowl then toss again
- Divide the salad among four plates
- Top with the avocado if using

Dr Oz: Rocco DiSpirito Cocoa-Dusted Almonds Recipe
Ingredients:
- 4 packets monk fruit extract
- 1 C almonds
- 1 1/2 tbsp raw coconut nectar
- salt
- 3 tbsp unsweetened cocoa powder
Directions:
- Preheat the oven to 350 degrees
- Combine half the monk fruit extract, coconut nectar, and a pinch of salt in a large mixing bowl then set aside
- Put the almonds on a parchment paper-lined baking sheet and toast in the oven until golden brown
- Transfer the almonds to a bowl and toss
- Put the almonds back on the lined baking sheet and bake, stirring occasionally, 5-8 minutes
- Transfer the almonds to a clean mixing bowl
- Mix the cocoa powder and the rest of the monk fruit extract in a separate bowl
- Add the cocoa powder mixture to the almonds and toss until coated
- Shake to remove excess coating, then put the almonds on a clean plate to cool
- Serve at room temperature or chilled
