Dr Oz: Valerie Bertinelli Recipes from One Dish At A Time Cookbook

Like many of us are probably wondering, Dr. Oz asked how Valerie Bertinelli fits cooking into such a busy life, especially with recipes like Eddie’s Favorite Chicken Sambal (how delicious does that sound!?!?). She shared that it’s actually a fun thing to do and she and her husband, Tom, make it a date night and dance and sing in the kitchen, making it a truly special time. She then shared some yummy recipes from her new cookbook, One Dish at a Time. She seems to pull inspiration from all over the place – she was even inspired by Dr Oz’s Quinoa Recipe!  The first recipe she shared on Dr Oz’s show was inspired from her visit to Italy, which didn’t happen until she was in her 50’s. It’s a peasant, rustic soup called Valerie Bertinelli’s Ribollita Soup, followed by Valerie Bertinelli’s Anise Twists. Dr. Oz assisted with the recipe preparation when Valerie asked him to cut the onion because she hates to cry when doing the chopping. Dr. Oz offered a great tip and pulled out swim goggles to wear while he chopped the onion. I may have to remember that the next time I’m in the kitchen.

Valerie Bertinelli’s Ribollita Soup & Anise Twists Recipes were big hits on the Dr Oz Show!

Dr Oz Ribollita Soup Ingredients

1 tablespoon extra virgin olive oil
1 Carrot, chopped
1 Rib Celery (preferably with leaves), chopped
1 Onion
1 28oz. can whole tomatoes (cut up), undrained
3 cups low-sodium vegetable broth
1 sprig fresh thyme or ¼ teaspoon dried
1 bunch Tuscan kale, center stems removed and discarded, leaves coarsely chopped
1 can(10 oz) cannellini beans, rinsed and drained
2 large slices peasant bread(ideally a couple days old), cut into chunks
Freshly shaved Parmigiano-Reggiano

Step #1 – Saute Vegetables
