  • 1/2 C granulated sugar
  • 1/2 a vanilla bean – split, scraped
  • 1 whole star anise
  • 1/8 tsp freshly grated nutmeg
  • 1/2 C buttermilk
  • 1/2 C long-grain rice
  • 4 C whole milk
  • 1 (3-inch) cinnamon stick
  • zest from 1/2 orange – removed with microplane
  • 1/8 tsp salt
  • 1/2 C chopped pistachios

Vivian Howard: Dr Oz Buttermilk Orange Rice Pudding + Pistachio Recipe Directions

  1. In a 2-quart saute pan or saucepan, stir together the sugar, rice, vanilla bean, milk, star anise, cinnamon stick, nutmeg, orange zest, and salt
  2. Slowly bring it to a simmer over medium heat
  3. Stir every couple minutes or so, watching to make sure the bottom of the pan doesn’t burn and the milk doesn’t boil over
  4. Lower the heat slightly and cook the pudding for 30 minutes, stirring often (it will thicken after about 8 minutes)
  5. After 30 minutes, remove from the heat and let it sit for 10 minutes (the mixture will still be slightly soupy)
  6. When ready to serve, stir in the buttermilk and top with the chopped pistachios
