Dr Oz: Vivian Howard Buttermilk Orange Rice Pudding + Pistachio Recipe Ingredients
- 1/2 C granulated sugar
- 1/2 a vanilla bean – split, scraped
- 1 whole star anise
- 1/8 tsp freshly grated nutmeg
- 1/2 C buttermilk
- 1/2 C long-grain rice
- 4 C whole milk
- 1 (3-inch) cinnamon stick
- zest from 1/2 orange – removed with microplane
- 1/8 tsp salt
- 1/2 C chopped pistachios
Vivian Howard: Dr Oz Buttermilk Orange Rice Pudding + Pistachio Recipe Directions
- In a 2-quart saute pan or saucepan, stir together the sugar, rice, vanilla bean, milk, star anise, cinnamon stick, nutmeg, orange zest, and salt
- Slowly bring it to a simmer over medium heat
- Stir every couple minutes or so, watching to make sure the bottom of the pan doesn’t burn and the milk doesn’t boil over
- Lower the heat slightly and cook the pudding for 30 minutes, stirring often (it will thicken after about 8 minutes)
- After 30 minutes, remove from the heat and let it sit for 10 minutes (the mixture will still be slightly soupy)
- When ready to serve, stir in the buttermilk and top with the chopped pistachios
