Dr Oz: Makeover Meal Ambush

You asked for it and you got it! On today’s show, Doctor Oz hit the streets to do a Makeover Meal Ambush to give us healthy, delicious alternatives. First stop, Atlanta (or as those from Atlanta say, The ATL). Doctor Oz was joined by Chef Richard Blais to visit Aisha and Nakisha, twin sisters, who were having a backyard barbecue, so he taught them how to make a healthy Pulled Chicken Sandwich Recipe. The twins wrote into Dr Oz to get help on how to lose weight. (Eating pork ribs and mac n’ cheese definitely wasn’t going to help the cause!) Chef Richard told the twins he could makeover their favorite barbecue foods to help them get healthy and lose weight.  Plus, Chef Donatella Arpaia taught us how to make a healthy Chicken Parm Hero Recipe.

Richard Blais Pulled Chicken Sandwich Recipe

Dr Oz saw a ton of food at the twins’ barbecue that he couldn’t approve of. Richard Blais said at thebarbecue, they had fatty cuts of ribs. Swap that out for lean chicken breast. Prepare a delicious brine (salt and sugar solution) to go along with the chicken and you’ll have that great tasting barbecue food with half the calories and fat.

Ingredients

12 white meat chicken breasts
Brine
4 qts of cold water
2 C of kosher salt
3 Tbsp of garlic powder
3 Tbsp of black pepper
1 C of brown sugar

BBQ Sauce
1 C of prepared yellow mustard
¼- ½ C of sugar
¼ C of apple juice
¾ C of cider vinegar
¼ C of light brown sugar
2 Tbsp chili powder
1 Tbsp black pepper
1 tsp of white pepper
1-1/2 tsp of cayenne pepper (add a little more for a kick)
2 Tbsp of garlic powder
2 Tbsp of onion powder
½ Tbsp of red pepper flakes
½ tsp of soy sauce
2 Tbsp of butter

Dr Oz: Coleslaw Recipe

Coleslaw
1 head of green cabbage, shredded
3 carrots, peeled and finely chopped
1 Tbsp of black pepper
1 Tbsp of celery seed
1 Tbsp of kosher salt
3 Tbsp of rice wine vinegar
¼ C mustard
½ C of pickled ginger juice
½ C of parsley, chopped
3 bunches of (thinly sliced) green onions

Directions

For brine: Heat to a simmer about 15-20 minutes and then cool
Pour over chicken to cover
Let the chicken brine for AT LEAST 1 hour (more time will give it more flavor)
Wash and pat dry

For BBQ sauce: Mix all ingredients (except soy and butter)
Simmer for 30-40 minutes
Stir in remaining ingredients and simmer for about 10 more minutes
Store in cool place
Grill the chicken with the BBQ sauce and pull it

For the coleslaw: Mix ingredients. Allow to rest to fully combine flavors. Add salt and pepper to taste.

For the sandwich: Marinate with bbq sauce, grill and pull chicken, use tzatziki yogurt sauce top with coleslaw.

Traditional: 690 calories. Chef Richard’s- 304 calories. The trick is using leaner cuts of meat.

Donatella Arpaia: Chicken Parm Hero Recipe

This time, Doctor Oz met up with Chef Donatella Arpaia and headed to New York to a group of teachers who love to order in their lunch. They would love to lose weight but found it hard to find healthy food to order. Dr Oz and Chef Donatella surprised the ladies with ways to makeover their takeout foods. The secret is a lot of flavor and replacing the fat.

Dr Oz: Chicken Parmesan Hero Recipe

Ingredients

2 large cloves of roasted garlic
1-2 Tbsp of extra-virgin olive oil
Dried oregano
6 bocconcini
1 C blanched cherry tomatoes
½ C zucchini, sliced
Salt and freshly ground pepper (to taste)
2 organic skinless chicken breast halves (pound thinly)
2 high-fiber whole-wheat baguettes (you can also use a low carb wrap)
1/2 leaves of basil

Simple Marinade
Juice of half a lemon
2 Tbsp of extra-virgin olive oil
Oregano (just a sprinkle)

Directions
In a large bowl, combine marinade contents
Pound out chicken breast
Add salt and freshly ground pepper to taste. Place in marinade.
Cover and chill in fridge for AT LEAST 1 hour
Sauté cherry tomatoes and zucchini in a teaspoon of olive oil in a large pan
Add salt and pepper to taste
Lightly coat grill pan with olive oil and place under medium/high heat
Add chicken and cook for about 10 minutes
Flip over and cook another 5-7 minute (or until done)
Place bread on grill until nice and hot
Spread roasted garlic over bread
Add chicken breast, tomatoes and mozzarella
For garnish, sprinkle a touch of basil on top

Traditional: 750 calories. Chef Dontella’s:498 calories
